You should open a spot. You have the experience and the talent. I think a place the size of Budgies in Van with a specific menu (like Budgies has with veggie burritos, for example) could be done without breaking the bank.

HAHAHAHAHAHAHAH no, it would absolutely break the bank. Restaurants are huge money pits the first few years they're open. Profit margin for a successful restaurants is generally around 12%. But I still wanna do it.

Oh, yes, it would be hella expensive, I just mean that there's a way to do it that won't put you bottom-of-the-ocean deep in debt. The person who started Budgies seemed to go about it in a smart way, she started small and let the business grow from profits, instead of going deeply in debt and working to dig herself out over a bunch of years.

What kind of restaurant would you like to open? Carl and I talk about opening a vegan restaurant. We have some (I think) good menu ideas. :)

I've always wanted to open a late night spot that had good vegan options. Make it hip but not too hip, cultivate a good customer base, etc. etc. etc. My boss at work likes what I've talked about so far, so maybe when he's more solvent I can hit him up for money. I dunno. It's an idea right now. But still, vegan soups, solid vegan sandwiches, pancakes and eggs...shit like that.
