Hey i have been baking lately.
Mostly cause i get a craving for cookies.
Did some vegan peanut butter cookies tonight.
A few days ago i did some oatmeal walnut chocolate chip cookies (only thing not vegan about them was the chocolate chips as they were milk chocolate)
Thinking about doing some Raspberry Streusel Bars in the future (also vegan). I also haven't made an apricot crisp in like 7 years.
I am doing vegan mostly cause well Eggs are expensive... as is butter. So for the most part i am not using it.
I happened to have a bunch of vegetable shortening so have been using that.
What else have people been doing??
Any ideas for me to make in the future

I am no good at baking. I worked in kitchens for 13 years and never, EVER got good at it. Someone once described it as the difference between art and science. I don't have the patience to bake.
I will, however, gladly destroy some of those vegan peanut butter cookies for you.
For reals.

he was going on about it.
haha can't promise anything, i am currently destroying them but trying to save some.

cooking vegan is awesome and healthy and so easy. put a damn banana in there to hold it all together and it usually turns out awesome.
but also, dont use vegetable shortening! sososo bad for you! oil or non hydrogenated spreads are way better. though more expensive i guess.
i made some wicked ginger snaps last night but burnt them a little...not cool.
