So, just decided to make a late lunch.
I stir fried:
1/2 red pepper
1 vegan sausage (I prefer the Tofurkey brand beer sausages, but in a pinch the Yves Sweet Italian rule)
1 head of broccoli
1/2 zucchini
and a handful of frozen corn
Cooked it in a sauce made of Sambel Olek, homemade pear syrup, garlic, vegetarian Oyster sauce, red wine, sesame oil, a teaspoon of tomato paste and apple cider vinegar. Threw it on top of some fettuccine (I'm all out of rice, but I've straight up seen Chinese people do this shit). And it rules. Thought I'd pass it along.
Currently eating this, with an Okanagen Springs Dark Porter, which balances out the sweetness of the sauce really well. Edge kids, I think that an iced green tea with this would work amazingly well.
Anyone else wanna share recipes?

I go through phases. I just got off a Mexican kick, now I'm into Asia, probs in a month or so I'll be doing Italian food like it's going out of style. I would love a vegan Pho recipe. Post that shit up.

I've been skirting on Veganity, found it hard to step into just because of a lack of knowledge. I have no veg papa to show me healthy, cheap meals with variety.

Zac, Meg and I have a shit ton of great vegan cook books. If you want, I'll pore through them tomorrow and xerox off a shitload of them and make a little zine to help you out.

I dunno. In the end, Italian food is three ingredients: Pasta, Sauce, Meat (or meat substitute). Once you realize this, it's actually pretty simple to cook Italian.
(PS substitute "Pasta" with "Tortilla" and "Sauce" with "Beans" and you can cook Mexican food. Cheese is excellent, but not necessary in either, so I didn't put it onto the list)

Baked Ziti/canneloni. Just get some pre-made ones from the grocery store, fill them with whatever ( use that ricotta cheese mix I told you about), place it in a square casserole dish, then pour tomato sauce on it. I usually just get some crushed tomatoes, add some basil, red wine vinager, salt, and pepper. Pour the sauce until it completely covers the canneloni, sprinkle nutritional yeast over the top, and bake at 350 degrees for 40 minutes or so. Also, good call on the polenta. I found that Bolognese sauce goes the best with it.

Hot Mango Curry
Ingredients:
7 tsp. Patak's Mild Curry Paste
2 tbsp. Patak's Hot Mango Chutney
2 tbsp. vegetable oil
1 stalk of celery, chopped
1 medium onion, chopped
1 can of chick peas
whatever other chopped vegetables you want to throw in the mix, once I used a carrot-sized chunk of burdock root. also cubed tofu works.
6 tbsp. Water
114g/4 oz. canned chopped tomatoes
1 tbsp. fresh coriander leaf, chopped
Instructions
Heat the oil and sauté the the onions and cook for 2 minutes. Stir in Patak's Mild Curry Paste, water and tomatoes, chick peas, celery, and whatever other vegetables/etc you feel like (tofu, burdock root, whatever). Cover and simmer for 20 minutes or until the densest veggie you've added has become soft. Stir in Patak's Hot Mango Chutney and serve over rice, garnished with coriander.
I like to make papadams (sp?) which are these flat tortilla things that bubble and expand into giant oily crackers when you put them in hot oil in a frying pan. I'm not sure that they're healthy but man they're tasty. This whole thing honestly doesn't take much preparation. It's basically just cutting some shit, throwing it all in a pot, starting some rice, and it's all ready 20 minutes later.
